Walk In Oven -- Need More than Mitts?

What happened

I was pulling soufflés out of the oven at work and I had hot mitts on, but didn't realize that my arm was sticking out lower than I thought. I went to pull them off of the rack and touched one of the bars on the rack. It had just come out of a 400+ degree oven. Ouch!! Ran some cold water over it, then put burn cream on it. It blistered and seems to be healing well. This picture is three days old. It is still a bit swollen.

What I'd Do Differently

Be aware of my surroundings. Yes, I had oven mitts on, but wasn't aware of the relation of my arm to the bars on the oven rack dolly. It was a dolly from a walk-in oven.
